FIRST is a particularly special single barrel that our team highlighted as having both exceptional fermentation and barrel qualities that will age for years to come. ⁣⁣This beer comes from the last batch of the 19|20 brewing season. This recipe pushes the level of unmalted wheat to 50% coupled with a higher hopping rate and longer boil.⁣FIRST spontaneously fermented and aged for two seasons exclusively in a single Calvados pipe that was previously used for many decades to age French apple brandy.⁣We packaged this beer without the use of a simple sugars but instead conditioned it exclusively with a small addition of young spontaneously fermenting beer. ⁣We believe that these painstaking processes will lend an incredible ageability
