"The insistent Scottish island breezes werebracing and rejuvenating, but at times alsoleft us seeking the solace of a warm fireand a glass of whisky as a restorative. Thebaronial house hotel on the island providedboth in abundance (!) and I considered awinter beer that could evoke those aromasand the flavours of peat smoke and a spicymalt character.
