After a single night in the coolship and a long rest in oak, this particular blend of one to three year old spontaneously fermented stock was once again laid to rest in French oak atop four pounds per gallon of fresh, local watermelon from Rayburn Farms. After months of resting on the fruit, this beer was hand bottled and naturally carbonated through bottle conditioning.
