Some people may say we are crazy for releasing a pastry stout in the middle of summer. We say, there is nothing that is more summer time than S'mores while camping.So for this beer we made a Imperial stout that had 15% of the grain bill as Graham Cracker crumble and some cacao powder. Once transferred to the kettle we added a large dose of cacao nibs and a tun of oven roasted marshmallows. Mid fermentation, we added a syrup that was made by our chef using a classic french marshmallow recipe. Then after fermentation we recirculated the beer on cacao nibs, vanilla beans from Madagascar and Papouasie. Also contains lactose for the milk-chocolate flavor.
