Sorachi Brut is a single-barrel strong beer crafted from a simple grist of pilsner and wheat malt, with heavy additions of Columbus and Sorachi Ace hops. Sorachi Ace, bred in Japan and now grown in the US, brings bold notes of coconut, lemon, dill, and butter. Used in the boil, it shows its most distinct character. The wort spontaneously fermented in white Burgundy barrels, chosen to complement the hop’s aromatics. After one year, a single barrel stood out as exceptional, bottled on its own. The result is delicate yet powerful, with a long, oily finish lifted by lively carbonation.
