The Dark Passenger an experimentation in free rise fermentation. We took wort from The Dark Traveler, put in into neutralized wine casks, added our house ale strain and let it ferment in the barrel without controlling the temperature. A fruity ester profile with notes of caramel, chocolate, and bread.
