3rd Room

The first release is 3rd Room, a chardonnay barrel aged sour ale. 3rd room was fermented in our stainless steel fermenters and then moved to some conditioning tanks where they were innoculated with blends of lactobacillus and brettanomyces. We then transferred to chardonnay barrels where they rested for just over a year, developing huge wine and oak character! We then bottle conditioned this for just over 6 months to allow it to fully carbonate and mature. At our release date we will have had just over 2 years invested into these bottles! 3rd room has moderate acidity, buttery chardonnay character, plenty of oak, overall quite clean but with some background fruity funk, needless to say tons of depth and complexity.
