Once upon a thyme we made an American wheat beer spiced with some delicious and delicate thyme in small quantities. Or at least that was the plan, here is how it went down:Things went south, fast. It just wasn't our day. The wort was rendered useless and wasn't even worthy of fermentation. Heck, went wrong? Let's try yet another thyme, as we have more thyme today.As the thyme went on things were looking up. Things went perfectly and we felt invincable. Delicious American hops were added to give the beer a spicy & citrusy taste profile that would complement the small amount of thyme. But thyme changes people. Suddenly A LOT of delicious hops were added along with A LOT of thyme. Same recipe brewed two thymes in one day.
