Panicle of Cymes; a wheat beer with mixed culture and lilac blossom. Panicle of Cymes refers to the form of inflorescence, or flower structure of the lilac blossom. This beer was brewed at our small, rural brewhouse in a wood-fired copper kettle, fermented in our cave and aged in oak for over a year before being racked over fresh lilac blossoms, harvested from our neighbors here in Craftsbury. Bottle conditioned with VT raw honey, Maine barley and wheat, VT hops.
