A Basque style cider using single varietal local Granny Smith apples from Symms Orchards. After pressing the juice was fermented in a traditional open vat method wherein wild yeast turns raw juice into a farmhouse-style cider. After fermentation, the cider was aged in a bourbon barrel for 11 months. This cider is crisp, tart, oaky, and funky. Best drank accompanied by Basque pintxos.
