A mixed fermentation beer with low acidity, complex malt profile, and our house mixed culture. This beer was made with a mix of different heritage grains including barley, wheat, rye and oats. Flavours of biscuits and toast, over bright floral aromas.This is made from some heritage varieties of barley. These different varieties were grown together in the field as a diverse polyculture – sometimes refered to as a population – along with some wheat, rye, oats and other grains. These grains can be grown in a way in which the farmer does not need to use fertilisers, nor pesticides, herbicides and fungicides, and in a system which can build soil. It’s a look to the past, but could also be a future of grain production. The grains bring a lot of complexity and depth to the beer, which has more sweetness, gentle acidity, and plenty of interesting fermentation aromatics.
