Imperial Stout aged in Stagg Jr. 8 year bourbon barrels for 23 months w/ toasted coconut, cacao nibs & vanilla beans.When we first tasted this particular set of Stagg Jr 8-year barrels, they were showing off some particularly robust chocolatey bourbon character, plus interestingly enough, a deep spicy, almost “old growth” oakiness and tannin presence we normally only see in barrels twice their age. We decided to complement these aggressive barrels with a hefty addition of toasted macaroon coconut, some of this year’s Madagascar vanilla which we have really been enjoying, and a blend of Brazilian and Ghanaian Cacao nibs. The result is some classic BA-pastry stout goodness. Huge nougat and fudgy chocolate, with that barrel character making its presence well-known in the nose and finish.
