Cherry Wine is a feather in our cap: some of the nicest juice from one of our favourite fruits. The acidity, juicy fruit and sweet spice notes of the Montmorency feel like quintessential Ontario summer.We bring our cherries in within 24 hours of harvest, and let them press themselves in a stainless steel tank, using just the free run juice for cherry wine.We let let this portion rest in a single barrel on Cabernet Franc lees, for 6 months before bottling.
