Collaboration with O’Briens. Roughly 60/40 blend of six months Bordeaux (red) barrel aged saison with a fresh spelt grisette. Dry hopped with Saaz and Sabro. Fermented with a mixed culture of Saison yeast, American wild yeast, Brett and lactic acid bacteria. Can condition with champagne yeast.
