our take on a berliner weisse style beer.single decoction, made with organic barley and organic wheat, inspired by history and by traditional methods, we didn’t use hops and we kept the beer raw (no boil).Primary fermentation in wooden barrels with lactobacillus, kölsch yeast and our house mixed culture. Aged in French oak barrels.Drink fresh or let it age and develop for years.
