Dry Ginger Sour

Not quite what you might expect when we say ginger beer, but for all intents and purposes this is a ginger beer. But head brewer Jake isn't so keen on a big sweet number (or at least there is enough out there already). So holding onto the sweetness just from the malt with big additions of fresh ginger, lime and zest in the boil and in fermenter has left this a tart, dry gingery beer. Just be careful when calling it a ginger as that's "our word."
