Rubicon is the latest release from our single barrel program. Limited to a scant 520 individually numbered bottles, the angels got a good share of this beauty before we deemed it ready for mere mortals. Rubicon is a vintage saison, matured and naturally soured in American oak barrels for over two years. Initial fermentation was with “Morrigan 1”, our native wild yeast, subsequent fermentation in the barrel was entirely spontaneous.Crisply sour with notes of raspberry sherbet, oak, biscuit malt and the unique spiciness of our “Morrigan 1” yeast. Sparkling and refreshing. Serve 8-12℃.
