Combining the best components of an old-world style Sahti and new-school IPAs arose the idea to create a hybrid beer style which we are calling a Nordic IPA.Using juniper berries in the mash to emulate the historical methods of brewing Sahti lends to a pleasing earthy pine harshness. In addition, we had to use heaps of rye malt in the mash to stay true with Sahti tradition. To finish it off, we used our favourite Norwegian kveik yeast for fermentation. But don’t be forgetting about the hops! We stuck with a classic heavyweight pairing of Chinook and Simcoe to play nicely with the other dominant notes in the beer.
