When we got the chance to buy some dark malted wheat for Christmas 2015 we couldn’t help ourselves, and we bought dozens of kilos of the stuff. After some brainstorming and discussions (over beer, of course) we came up with a beer containing wheat and pilsner malt as well as a hint of liquorice. The liquorice flavour comes from chervil, which we pick locally on our little island, Heimaey. The result is Syrtlingur, which we named after the underwater volcanic fissure which erupted in 1965, creating a whole new island which the sea broke down in a matter of months after its creation.
