Mont Sainte-Victoire is our spontaneous impression of the monolith of saison. The fifth depiction was brewed with NJ wheat, buckwheat and rye, and aged hops in the kettle and coolship, before an open primary spontaneous fermentation and racking to barrels for 20 months of continued fermentation and maturation prior to bottling.
