Second blend from our Solera of spontaneously fermented ales started in early 2019. Expect lifted complex aromatics & superb texture with a long, dry, refreshingly acidic palate.Features spelt - an ancient grain of prodigious flavour - and aromatic whole hop flowers grown in the Derwent River Valley. The worst is soured with wild lactobacillus species naturally occurring on the brewing grains. Over time, with accumulated bottle age, the flavours & aromas unique to wild yeast and bacteria will be gradually unveiled.
