We joined forces with Clos de Colombes Winery and arose a wild blond aged in a freshly emptied Viognier Romanian oak barrel for 16 months.A pure harmony with Brettanomyces involved, a rich bouquet with the aroma of autumn peach and taste of apricot, toasted oak, vanilla and hay notes. An intense aftertaste with tart and leather tones.Character: light, acidic, fruity, earthy, leathery.Pair it with lobster, fish, lamb curry, foie gras or aged cheese.
