Once in a while opportunities arise that really are too good to pass up. 18 months ago we got the opportunity to fill a super limited and super special whisky barrel with our now infamous barleywine, Banshee. The history of this single barrel though is what makes it truly unique! It was a Perdro Ximenez barrel freshly delivered to us 6 years ago, still wet with the renowned sherry. We immediately set about finishing a very delicious Ramjet Whisky in the barrel and then, once our latest Banshee batch had finished ferment, we had the brainwave to transfer the whisky out to another PX barrel, so we could age a very limited portion of Banshee in the PX-Ramjet Whisky barrel. Only 250L exist of this absolutely luscious beer, rich with a malty depth that is impossible to achieve without the help of whisky and Pedro Ximenez.
