Schiste sans Schiste is a mixed culture ale made with oyster shells from the restaurant Poly, Surry Hills and dehydrated Wapengo Rocks Wild Organic oysters from Wapengo, NSW. The beer shows pronounced schistosity without being grown on rocky, mineral heavy soils.
