BARREL ADOPTION 2022P. Rye or Port Rye, yes it sounds like an Island in the Caribbean, just keep thinking warm thoughts For this beer 18% of the grist was pale rye, yes a sticky sticky mash! The design idea was to marry the spicy rye bite with a sweet rounded unctuous (yes unctuous) dark fruit sweet ruby port flavours. At this stage we have realised that use of some of the fortified wine barrels need more time than others. The likes of port / madeira / cognac really need to run through the full set of seasons to open the barrels up and get the best expression from the previous content. This barrel was no different.
