St Florence is named after Topher and his wife's first daughter. Saint Florence was a 7th century abbess from Cartagena, Spain. In 2020, this variant was made from golden mixed fermentation, barrel aged beer and 60kg of hand picked smoke affected Pinot Grigio grapes from Ravensworth Wines in Murrumbateman, NSW.
