Our mystery apples are an unknown variety, grown on trees sent to us in error when planting Ambrosia in 2014. These tart, sweet apples underwent their primary fermentation in freshly emptied barrels with a chardonnay yeast. All bubbles were created in the bottle during a second fermentation. With no sugar added, the time spent in the barrel softens this dry, crisp expression of our 2018 mystery apples
