In 2018 we collaborated with our local friends at The Monk's Cellar from Roseville, CA. We brewed a Belgian-Style Quadruple and added cherries and raspberries during fermentation. Thinking it would be a fun idea we aged a portion of the fruited beer in 14 year old 4 Roses Bourbon barrels. 16 months later we decided to pull the barrels and serve it without any further treatments. Barrel Aged Gargamel displays heavy notes of oak, toffee, and bourbon. The fruit is present but not the dominant flavor.
