Sparkling Cherry Wine

We made this cherry wine by blending two of our favourite fruits: Montmorency cherries, and NY Muscat (Ontario grown, of course).We bring our cherries in within 24 hours of harvest, and let them press themselves in a stainless steel tank, using just the free run juice for cherry wine.The Muscat portion was left on skins for 3 months before a gentle press, and blended just before bottling.
