It's been far too long since we brewed a Kolsch. Over 3 years in fact. This is based on a crisp base of German pilsner malt and hopped on the hot side with a blend of Tettnang and Saphir with the level of restraint typically found in the style. We depart a little from the typical on the cold side. After fermentation with a German Ale strain known for it's clean character we then gave this a very light dry hop 3g/l with floral and tangerine forward Saphir. This pours a pale and clear straw yellow with a dense white foam and drinks as crispily as it looks.
