Coffee, as you may know, is not actually a bean but rather the seeds from the berries of the coffee plant. Those seeds get roasted and ground, and thus coffee is born. That fruit around the outside of the coffee ‘bean’? Cascara. Boom. Now that’s a thing you know.Our mates down at Clark Street Roasters, counterintuitively located just down the road not on Clark but on Crown Street, have gifted us a few handfuls of this dried fruit, rather resembling the taste and texture of dried cranberries. Our first thought was: what beer can we make from this? Brewer Kenny had the answer - a Saison. Brewed with a little of the coffee chaff to offset the lack of husks on the wheat malt used, the ClusterFunk pours cloudy, the colour of pale straw with a fluffy white head, and has an aroma of bubblegum and spice. This yeast driven brew is complex, fruity and dry and with just a hint of a refreshingly hoppy finish.Making up for his throat-burning Quetzlacatanango, this Saison from Brewer Kenny is refreshing and delightful on a hot summer evening.
