2022 BAPThe second of the double barrel beers. The beer was produced with 26% pale rye in the grist, originally aged in Banylus with for simple description is the French version of Amarone. The grapes are dried out prior to pressing, the resulting wine is a higher abv with more concentrated sugars and a greater grape skin contact. The final wines are usually very robust and tannic. The starting point of the beer was a robust spicy rye that would make the barrel. What we found over time was that we achieved a balance but the beer lacked a touch of sweetness. Rather than hitting it with lactose or sweetener the second stage of maturation was include to extract vanillin (vanilla) from the American oak bourbon barrel to round out the dry beer
