Three of this year’s b’day beers were made in Perth by Head Brewer, Jackson Purser...including this specialty Passionfruit Mosaic! His recipes are pretty tight, turns out his tasting notes are too:“There’s an ethos we feel explains our OG Mosaic IPA - ‘if it’s worth doing, it’s worth overdoing’. We took that approach with this iteration as well, throwing a huge amount of passionfruit juice into the late ferment.The resulting beer pours with a dense haze, white pillowy head, and bright orange hue. On the palate, a nostalgic whack of bitterness morphs with the tart passionfruit, creating a plethora of pink grapefruit flavours and aromas."Definitely keen.
