Dawn is a beer that has been aged on spent Schönburger and Reichensteiner grape skins kindly provided by Stanlake Park. To complement the tannins and grassiness from the grape skins we added strawberry puree for fruitiness and pomegranate juice for tanginess. The result is a playful sour that balances some lovely fruity notes against a rustic, more characterful backdrop.
