So, It Begins was fermented initially with Ardennes yeast before resting for 18 months in Pinot Noir & Chardonnay oak barrels with a blend of Lacto, Pedio & Brett cultures. The barrels were then blended into stainless and aged for 6 months at 0° before being bottled with more Brett & conditioned for a further 3 months before release.
