'Tis the season of big beers, stupid ideas and non-canonically coloured snow. We infused fresh, 1 and 2 year old native pine timber, which we have aged and toasted ourselves into a big, chewy double red. With loads of toasted and roasted malts, balanced by Simcoe, Rakau and EKG in a DDH over a low and slow ferment, we've balanced a bunch of massive flavours to bring you the ultimate yuletide gift.Caramel malts, pine-y hops and nutty, toasted pine on the nose, with an undercurrent of marmalade, fresh sourdough toast and chocolate. It's super complex, with different flavours arriving as it warms. That woody, oak-like presence becomes more obvious as it warms, aiding a sense of dryness to an otherwise sweet finishing beer. The hops support the native pine flavours with citrus, resin, and a herbal-woody quality.It's a big beer, one for sipping, or smashing if the in-laws are over.
