A collaboration with Rey Arbol from Jalisco, Mexico. We brewed this beer with New Zealand's magical Phantasm. The thiols elevate the tropical flavors from the hops.We added Phantasm early in fermentation to let the yeast have as much time as possible to work its magic (biotransformation ie extra flavor).Along with the Phantasm, we dry hopped the beer with a little bit of Nelson Sauvin to coax a bit more white grape flavor into the beer, before adding our beloved Strata hops to round it out.We get new flavors after every sip. Lots of notes of sweet white grape juice, juicy mango, and touches of earthy lychee and dragonfruit. We are tasting a lot of kiwi and fresh pear.This beer literally makes your mouth water... while it’s in your mouth. It’s somehow more wet than other liquids... bizarre, but when you try it, you’ll know exactly what we mean.It is herbal, tantalizing, unique, and honestly just a really beautiful beer.
