Imperial Stout w/ Ghanaian & Belizian Cacao nibs, & Madagascar vanilla beans.We designed this beer with one goal in mind: chocolate. It began with 25 pounds of cacao nibs in the mash, along with an emphasis on malts which chocolatey favors themselves. The beer was designed to be a bit thicker and fuller than usual as well, in anticipation of having to balance out an additional 75lbs of cacao nibs added after fermentation (by far the largest cacao addition we’ve ever attempted). To round out the profile, we selected Madagascar vanilla beans. These are the most commonly used varietal in vanilla baking extracts, so their aroma has a strong association with brownies and cookies, albeit richer and more natural than you get from any extract. Roll out the ‘ol “brownie batter” trope if you like; this one is a true straight-to-the-point pastry stout.
