Brewed in collaboration with After Hours Brewing Company in St. Louis, the base beer was fermented and aged in Chardonnay barrels. The After Hours boys were cool enough to culture and grow up multiple wild yeast strains harvested from local, family grown fruit. After the yeasties did their job, we continued to let this Sour age and develop for a full six years in the barrel before we turned it into a real monster!This barrel forward Wild Ale received monstrous amounts of peach, apricot, and passion fruit to add a thick and fruity compliment to the oak character.
