A few weeks ago we invited some old friends over from London for a visit and a bit of a brew. Mark from Exale who has a good pedigree as a forager suggested an ingredient he had some experience with and knew we had in abundance in Galway, seaweed. After some research we landed on Dikisk from Connemara Organic Seaweed. It lends a lovely umami quality and a little smokiness even also also it was traditional to add salt to German gose so we get a little salt dose from the dried seaweed. This pairs really well with the sharp citrus of the Japanese yuzu and the delicate fruit notes of the sour yeast. The name stems from an Irish man who wrote the first ever Japanese national anthem, Kimigayo
