Our Mount Rushmore of hop varietals argument has reared its head again - we seem to be happy and in agreement with three of the four; Citra, Simcoe and Mosaic are undoubtedly solid picks and have earned their place in this pale ale, but Big Joe Webb threw a curve ball even more straggly than Matt by tossing Talus into the ring as his suggestion. Talus?! You'd better believe it. As described by the man himself, this varietal brings all the incredible flavour and aroma compounds of a positively modern hop in Sabro, but manages to create a hybrid of a Pacific Northwest hop by incorporating a metric tonne of complex herbal, floral and earthy notes unlike anything else around today.
