Rustic beer with organic barley and organic unmalted wheat. Primary open fermentation with our house mixed culture. Aged for 4 months in French oak barrels. Dry hopped with Swiss organic hops (Cascade and Saphir). Infused with organic Alpine herbs. At bottling, addition of Brettanomyces yeast. Refermented in bottle for 3 more months before release. Drink fresh or let it age and develop for years.
