The best hop combos are always the most simple - the ones that dance perfectly together and sing in harmony with one another. When you’re looking to create a flavour-packed pale ale just floating below that IPA strength with that in mind then, there is probably no better combination than Azacca and Simcoe. A pairing that has bobbed its way in and out of our brew plans over the years, and one that is a certified staff favourite, we’ve taken this pairing from micro strength all the way up to DIPA territory and have always been blown away by the intensity both hops bring to the table when paired together. Expect to be finding a prickly pine needle base layer to start things off, before a certified tidal wave of berry, peach and citrus zest announces its arrival with gusto from Simcoe, rounding off with those signature mango, dragonfruit, and pineapple notes from Azacca.
