This is a Milk Wine, an oddball riff on an English Barleywine and a new(i think) creation of our very own. Soon to sweep the nation in popularity for certain!This is not JUST a barleywine with lactose. We started with a large, caramel malt heavy grain recipe and fermented it with our favorite english yeast. We added an enzyme during fermentation that breaks down complex sugars and allows the yeast to completely ferment the beer to dryness(the same that's used for brut ipa)THEN we backsweetened the very dry, highly attenuated beer with SO much lactose. over 30lbs per BBL!A huge, creamy body carries flavors of toast, caramel, and dried fruit.
