For this seasonal cider, we fermented a blend of apple and raspberries juice with Philly Sour yeast, an unique yeast that can generate both lactic acid and alcohol. It produces a bright acidity and a complex fruity ester profile. Plus aging on cypress & oak wood which impart vanilla and woody flavor. The final product is a one of a kind cider that’s sweet and sour with notes of apple, raspberries, citrus and vanilla woody flavor.
