We had our good friends from Third Barrel up to brew in Donegal in between lock downs in 2020. A strong, dark & sour ale was hopped in the kettle with Mosaic. We fermented with our house mixed culture of ale yeast & multiple Brettanomyces strains before ageing in Médoc Bordeaux Red Wine Barrels for 18 months. The resulting beer is a bright rust red in colour, full of oak & fruity red wine on the nose, with more oak & a touch of blackberry on tasting and a dry funky finish.
