Passed Over in Silence 2025 was created from oak aged ales imbued with white Jasmine pearl tea, raspberry leaf, hibiscus and oolong tea.The ales were brewed with Organic red wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW before resting in French oak barrels until when they were firstly infused before bottling with second use white Jasmine pearl tea, raspberry leaf and hibiscus after they were first brewed in order to make the non-alcoholic drink T.I.N.A. 2.0Before bottling, is was then blended with a portion of ale made with Taiwanese High Mountain oolong tea from our 2024 bottling of Passed Over in Silence that rested for an additional year in barrel
