The recipe for our Easter Beer is based on a series of experiments trying to recreate an ale from a recipe on some old clay tables found in what is now called Iraq. The recipe, called "The Hymn to Ninkasi", describes in detail how beer was made using a mis of barley, honey, grapes and dates. Amber colored, slightly hazy beer with a white head. Soft sweet, slightly vineous aroma with hints of honey and hay. The body is light and the palate is complex with nutty, bready malts and hints of bisquit and bright citrus. Short, dry, slightly tart finish and only slight bitterness.
