This rustic Saison was brewed with a base of pilsner-style malt, malted spelt, and a small amount of undermodified wind malt. Sterling hops were used in the mash, boil, and a small dryhop addition. Fermented and aged in oak puncheon with yeast isolated from a spooky producer of Belgian Saison, as well as the cultures that happen to live inside the barrel. Saison can be a lot of things. This just one of them.
