This wild saison fermented in a single 500L oak puncheon for 19 months on our mixed culture of Lactobacillus and brettanomyces. It then naturally carbonated in the keg and conditioned for 21 months. A beautiful flavor of white peach and limestone riverbed are present in this calculation of time and patience.
